Last night I chopped up some veg, added a packet of bernard matthews roast chicken cut up, threw it into a big bowl and topped it up with boiling water and half a stock cube – felt like fine dining and I was never ever a soup person. It was so delicious and under a 200 calories, didn’t know what to do with myself after because I knew I needed to eat my calorie allowance or I’d get hungry. Ended up boiling an egg and eating it just like that π
Smoked Salmon and avocado with courgetti is on list of meal options for this weekend….I love this indulgent idea of smoked salmon for breakfast, reminds me of Christmas!
