Wholemeal flatbreads

To accompany a meal or use as a sort of thin pizza base

Ingredients

• 1 1/2 cups wholemeal flour
• 1/2 tsp salt (optional)
• 1-2 tbl oil (I use canola)
• 3/4 cup chilled water (approximate)

Method

Sift the flour, stir in the salt (if used) then pour on the oil & rub to a sort of crumbly mix. Add the water then bring it together to make a medium soft dough. If it feels stiff add more water, it's likely to need more due to the bran in the flour but it's better to add it gradually than end up with a sticky mess. Knead it for a few minutes on a lightly floured surface then cut into 4 equal pieces.Shape the pieces into balls then roll them into discs.

Very lightly oil a pan, heat well then fry a flat bread till it begins to show little bumps (which will look like freckles on the underside, if they are not freckled they are not ready to turn, so check) when they are ready to turn, flip them over to cook the other side. Should take only a bout a minute each side tops. Same for the next 3.

For pizza cook as above then top with whatever & grill.
