Baking with Khorasan Flour

    Hi all.
    I am just starting the BSD for general health/common sense reasons and because I know I have a slight carb addiction (according to the quiz and knowing myself!!).
    I see that whole grain bread isn’t given a totally bad rap and that in the weekly diet a Tuna Wrap is included. So it;s not completely banned!!
    I don’t eat bread as a rule since reading the Protein Power Life Plan in 2008. But I like to bake bread when the kids come down and then enjoy eating it!
    I have discovered Khorasan flour which is an ancient grain and is said to have heaps more protein and fibre in it.
    Has anyone used it?? If Doctors/researchers read this, could you let me know what you think??
    It will obviously still have carbs, but could I eat this on occasion???

    I just Googled it and I’m familiar with it under its other name, kamut. It is massively high in carbs. One cup of it cooked has 45 grams of carbohydrates. That’s more the double my daily limit for everything I eat. The 7 grams of fiber is not bad for bread, but completely overwhelmed by the high net carb count. Protein is better than Wonder Bread at 11 grams, but significantly lower than the sprouted multigrain I used to eat when I was still labouring under the delusion that whole grains were good for me.

    If you’re doing the BSD for general reasons and don’t really care about carb counting or spikes in blood sugar, a seldom-indulged dalliance with heritage grains could work for you. There are people who eat a slice of sourdough or ryvita crackers or oatmeal on a regular basis while on the BSD. You will lose weight more slowly, however, and depending on how mild your addiction really is, feeding it this kind of stuff will keep you hooked. In the end, it’s just another opiate.

    Consider baking low-carb bread instead. You can do amazing things with egg whites, vinegar, psyillium husk, almond flour, coconut flour, flax seed meal, lupini flour and other non-grains. I posted these in another thread just today:

    I didn’t see anywhere about the carb loading. Wow!
    It was the protein and fibre comparisons i was interested in. A site i looked at did something like 40% (or 60???) More protein than other wholegrains.
    Think ill give it a miss! Maybe occasionally???
    Once i bake it tho…..
    Might try other recipes as you suggest. Could be like vego bacon…. still not the real deal.
    I need to do without. Carb addiction!!
