Sausage and Pepper Casserole

A comforting and economical dish which can be served with quinoa or cauliflower rice.


• 8 good quality sausages
• 1 red pepper
• 1orange pepper
• 1green pepper
• 4 large mushrooms
• 1 tin chopped tomato
• 1 red onion
• 1 clove garlic crushed
• Dried oregano
• Fresh green or red chillies (optional)
• half a chicken stock cube
• Olive oil


Brown the sausages in a small amount of olive oil in a pan whilst chopping peppers, onions and mushrooms. Combine all ingredients in a casserole dish and cook for approx 45 minutes.

    Tasty recipe. Much less bland than I thought it would be. I would have like to know how many calories, carbs etc as I’m new to this diet and no idea of calorific value etc.

    Love this recipe, found Tesco in the UK doing a packet of Bratworst German sausages, which we use with this recipe. No idea of calorific count, must sit down and work it out, but a fantastic recipe and even add extra beans or konjac rice (another find in Tesco, every little helps 😜) to bulk it out. Give it a go you will not be disappointed.

    Very nice.. but my calories above incorrect . It’s more like 350 but dependant on your sausages 😀
