Prawn ‘open fajitas’

• 2 mini wraps
• Handful fresh coriander
• 150g raw King prawns
• 1 red onion, peeled and chopped into eighths.
• 1 avocado
• 1 lime
• 2 peppers sliced
• 8 cherry tomatoes
• 1 tsp cumin
• 1 tsp paprika
• 1 red chilli
• 2 tbsp 0% fat Greek yoghurt
• Salt and pepper to taste


Peel and chose your avocado and add to a bowl with the chopped cherry tomatoes, half of the chopped fresh coriander, the juice of a lime and a pinch of salt. Mix and set aside
Heat a large pan or wok and add your spices to toast for 10 seconds. Add the onions and peppers and keep stirring. Add 1 tbsp water to stop it from sticking. Stir fry for 6-8 minutes until the onions and peppers are softening and then add the prawns and keep moving it around the pan until the prawns change colour and are cooked through. Add a pinch of salt and the rest of the coriander.
Heat your wrap directly on the hob for a few seconds.
Lay the wrap on the plate and pile on half of the prawns topped with half of the avocado mix and a spoon of yoghurt
