Green Lentil Soup

Thick and satisfying soup

Ingredients

• 1 Medium Carrot- diced
• 1 Medium White Onion - diced
• 1 Stick of Celery - diced
• 2 Fresh Medium Tomatoes- diced
• 3 garlic cloves - crushed
• 2 Tablespoons Tomato Puree
• 1/2 pint Veg Stock
• 1 Tablespoon dried Mixed Herbs
• 1 400gm tin of Green Lentils
• Glug of Olive Oil

Method

Heat the oil in a medium pan
Add onions, celery, carrots, garlic and cook for about 7-8 minutes
Add stock, tomato puree, dried herbs and fresh tomatoes.
Bring to the boil and cook until veg are soft - about 10-12 mins
Add the lentils, salt and pepper to taste
Heat through and serve
Will keep for about 5 days in a sealed container. Also freezes well
