Yes, really! Ideal for breakfast.

Ingredients

• 1 banana ( very ripe is ideal!)
• 2 eggs

Method

Squash banana until smooth - really smooth

Beat in eggs

Prepare a hot pan, with a spot of oil or frylight. Put a ladleful into the pan, tip to spread. Flip when set. Beware - it is heavier than a usual pancake.

Not tried it, but isn’t banana one of the frowned upon food in the BSD due to high sugar content?

Tried these pancakes this morning..really tasty. Whiked the eggs and banana to make it really fluffy..not heavy at all.. 2qgr carb as banana weighed 90 grams..will be making this again as a weekend treat

Excellent. I enjoyed for brunch on a ‘two meal’ day. Used one small very ripe banana, one egg and served with 1 teaspoon maple syrup and a few chopped walnuts. Delicious. Cooked in a non stick pan so kept cals down using no oil for this one. No sugar spike but delicious flavours.

Can’t usually eat eggs at breakfast time but this goes down beautifully. However I can’t manage to flip it – going to put under the grill next time.
