Broccoli Sandwich Bread

When I’m in the mood for a sandwich or a slice of toast, this is my go-to recipe. I love how something that feels and tastes quite ‘bready’ is actually a serve of vegetables. I slice and freeze so I can just defrost in the toaster as needed.

This broccoli bread does look very green, which I love but I’ve found my boys are much happier eating the white, cauliflower version instead.

Ingredients

• 500g (1lb) broccoli, 2 small
• 4 eggs
• 100g (3.5oz) almond meal
• 1/4 teaspoon salt

Method

1. Preheat your oven to 200C (400F).

2. Whizz your broccoli using your food processor until it looks a bit like fine couscous. Or chop as finely as possible.

3. Add eggs, almond meal and salt to the food processor bowl. Stir with a spoon until combined.

4. Line a baking tray with baking (parchment) paper. Tip the broccoli mixture onto the lined tray then using your hands smooth into a rectangle about 1cm (1/3in) thick.

5. Bake for 20-25 minutes or until the bread is slightly browned and feels firm and springy when touched.

6. Cool on the tray. Cut in half crosswise and then into 3-4 lengthwise to make 6-8 slices (or cut to your preferred size).

    Just made this with cauliflower and very impressed. It really looks like bread. Have had it with a fried egg, and later had some with nut butter. Lining the tin is crucial and it needs pressing down really hard. I love bread so this could be really useful. Thanks.

    I made this because although I don’t crave bread, it’s a useful vehicle for other things. I really love it – I could eat it just by itself but great to have something for butter and marmite! The only (very small) downside is that it is very fragile so probably not robust enough for a packed lunch unless well protected.

    Made this last night & stored in the fridge. Only made half the quantity & ended up with 6 slices. Had a slice topped with a runny fried egg this morning & it was delicious. Going to attempt it with cauliflower & carrot next time. Pleasantly surprised at how good it tasted 😀

    Thank you SO much for this recipe! When I made it recently, it turned out perfectly and was just what I had been looking for. I was amazed that just three ingredients could make such an acceptable and tasty ‘bread’. Brilliant!

    I’m allergic to almonds. Have anyone tried with something else, like psyllium husk?

    I have a complaint!………

    Had a dinner party this evening, and my friends WHO ARE NOT ON BSD ate the whole lot. 🤣

    It is the most delicious thing ever. It was the first time I’d trying to make this ‘bread’, We don’t understand how it doesn’t taste of broccoli at all.

    This is SUCH a useful recipe to have up your sleeve, thank you so much. Will definitely try it with cauliflower too.

    PS, the whole menu was a bit of an experiment, apart from the meat, of which there was quite a lot, everything else apart from this bread, came out of the book. And the joke was my friends had no idea. I had to come clean when I didn’t have a glass of wine. Everyone was amazed that you could be on a ‘diet’ and eat like a king.
