A hearty and satisfying vegetable soup with hardly any calories or carbs
Ingredients
• Aprox 1/2 White Cabbage
• 1/2 Swede
• 2 Carrotts
• 1 Leek
• 2 Celery Sticks
• 1 White Onion
• 2 Fresh Tomatoes- skinned
• 3-4 Garlic Cloves
• 2 1/2 Pints (3 Litres)of Veg Stock
• Tablespoon of Dried Herbs

Method
Chop all the vegetables and place in a large pan
Add the stock and herbs
Cover and cook for around half an hour until all the vegetables are soft (add a little more water if necessary)
Puree 3/4 of the soup
Mix remaining veggies with the puree and season to taste
Enjoy
This can be adjusted to your liking e.g. add a tin of tomatoes, add a tin of mixed beans( although this will change the carbs), add chilli or use different vegetables.
Keeps well for 5 days or so in the fridge and freezes well
