Broccoli Sandwich Bread

When I’m in the mood for a sandwich or a slice of toast, this is my go-to recipe. I love how something that feels and tastes quite ‘bready’ is actually a serve of vegetables. I slice and freeze so I can just defrost in the toaster as needed.

This broccoli bread does look very green, which I love but I’ve found my boys are much happier eating the white, cauliflower version instead.

Ingredients

• 500g (1lb) broccoli, 2 small
• 4 eggs
• 100g (3.5oz) almond meal
• 1/4 teaspoon salt

Method

1. Preheat your oven to 200C (400F).

2. Whizz your broccoli using your food processor until it looks a bit like fine couscous. Or chop as finely as possible.

3. Add eggs, almond meal and salt to the food processor bowl. Stir with a spoon until combined.

4. Line a baking tray with baking (parchment) paper. Tip the broccoli mixture onto the lined tray then using your hands smooth into a rectangle about 1cm (1/3in) thick.

5. Bake for 20-25 minutes or until the bread is slightly browned and feels firm and springy when touched.

6. Cool on the tray. Cut in half crosswise and then into 3-4 lengthwise to make 6-8 slices (or cut to your preferred size).

    I tried with psyllium husk, and it worked fine.

    Easy to make and cut into pieces, it looked the part. However I thought the taste of broccoli quite strong and I
    was disappointed with the texture. I toasted it for ages but it didnt crispness up. I had it with poached eggs for breakfast. It was satisfying but calling it ‘bread’ is pushing it a bit !

    This is fantastic. Because I don’t eat bread anymore finding a healthy, but tasty, anything to go with cheese or egg has been a bit difficult !
    When you just want a snack instead of cooking a full meal and you would normally have a toastie…. this is impressive and my Husband loves it too.
    I will definitely try the cauliflower bread as well – I am always making cauliflower rice / couscous
    And I will try maybe popping some seeds in the next mix

    I find using frozen broccoli, defrosted, not cooked, mixed with flaked almonds into a paste works well. Also separate the eggs; stir in the yolks and then fold in the whisked whites. This seems to hold the bread together well.

    Hi, going to try this tonight! You say it makes 6-8 slices but you give the calorie content as 126g per slice! I’m a bit confused!

    Amazing result, who would have thought these ingredients combined would produce a fantastic substitute for starchy bread. Delicious hot or cold on its own or with poached eggs. Only problem now is not eating all of it at once.

    This is absolutely delicious as a “vehicle “ for eggs . I prefer using cauliflower as it has a less distinct taste. Sometimes, I add turmeric for added colour (and goodness!). It freezes really well and I just take out a slice as and when I need it.

    I made with cauliflower, and added a sprinkle of sesame seeds on top before cooking. Made half quantity. Turned out great and freezes well. Lovely to use to make cheese on toast.
