Roman lettuce leaves stuffed with a savoury tuna mix, sprinkled with rocket.
• 80g Roman lettuce leaves
• 90g cocktail tomatoes
• 60g cucumber
• 30g wild rocket
• Tin of tuna in brine
• 15g red onion
• 15ml light mayo
1) Drain tuna
2) Finely chop the rest of the ingredients excluding Roman lettuce and rocket
3) Mix 1 & 2 to make savoury tuna
4) spoon mix between the lettuce leaves ( I had 5 big leaves)
5) sprinkle rocket on top
6)... Enjoy!!! Have a napkin handy though as its a little sloppy!
