spicy salmon dish; a recipe from the Dabetic cooking course that I have been attending.
Serve on a bed of courgetti (cals for that not in this recipe)
For less calories, use a smaller portion of salmon – this allows a fillet of 120g per person, which seems to be an average size filet from a supermarket.

Ingredients

• 240 g salmon
• 1/2 tablespoon rice vinegar
• 1 tbsp soy sauce
• pinch red pepper flakes
• 1 tsp sesame oil
• 1/4 tsp tabasco
• 1 clove garlic
• 1/4 tsp ginger grated
• 1 tbsp chopped shallots
• 1/4 tsp honey

Method

whisk together all the ingredients for the marinade, coat the salmon and leave in a bowl or zip lock bag, place in the fridge for at least 15 minutes
preheat the oven to 190c, line a baking tray or preheat an oven proof serving dish
take the salmon out of the marinade, and place it on the oven tray or baking dish. spoon on any remaining marinade
bake for 10-12 minutes until the salmon is cooked through while it's cooking, prepare the courgetti
serve the salmon on the bed of courgetti

    This was delicious! I used a 1lb piece of salmon, so doubled everything and the cooking time was close to double. I love the skin, so I flipped it over toward the end and broiled the skin side – really yummy!
