really tasty – I upped the amount of harissa a bit but Tesco’s own may be less spicy than other brands.
a great side dish for tofu, eggs or fish-photo not super pretty 🙂 but truly delicious!
• • 3-4 aubergine (eggplant)
• • 1-2 teaspoons harissa (to taste)
• • 1 100g jar or 2 small tins anchovies (or app 50g finely chopped olives for vegetarian version)
Dice aubergine and place on a large baking tray or two
Coat with olive oil and bake until brown
Place all the eggplant in a large pot with anchovies (or olives) add harissa to taste and cook until completely softened
