Chorizo, tomato and leeks – ideal for topping courgetti or cauli rice. 153 cals and 5.17g carbs per serving

Ingredients

• 100g leeks
• 100g chorizo
• 2 garlic cloves
• 400g tinned tomatoes
• 1tsp olive oil
• 50g yellow pepper

Method

Chop chorizo into small cubes and gently fry in olive oil. Add leeks, yellow pepper, cover and cook very slowly for 20-30 mins. Add garlic for final 5 mins. Add a tin of tomatoes and reduce down. Serve with cauli rice or courgetti.

    This is my new go-to recipe! Just made it tonight and it was delicious. I couldn’t give my husband yet another stuffed aubergine! Haha? Will definitely make again!
