Smoky bean and veg soup

A hearty warming soup for a cold day… easily doubled to serve 2 or to have a quick reheatable meal in the fridge

Ingredients

• half a tin of borlotti beans
• 1 tsp olive oil
• 30g carrot finely diced
• small stick celery finely sliced
• 25g onions finely sliced
• tsp smoked paprika
• clove of garlic finely chopped
• 100g tinned tomatoes
• half an oxo cube (I used chicken - veggies substitute)
• 1 tsp red lentils
• 1/4 tsp agave nectar
• 250 mls boiling water
• S&P to taste

Method

finely chop all of the vegetables and saute in the olive oil over a low/medium heat, add the paprika and when the vegetables have started to soften add the tomatoes and water, followed by the drained beans and lentils. Finally add a dash of pepper and the half a stock cube along with the agave nectar, cooking on a low heat until the veg and beans are soft and the soup has thickened to a nice consistency - about 15 minutes. Taste and season as required, makes 1 generous portion at 200 cals and 26g of carbs, 5g of fat and 9g of protein (according to Myfitnesspal)
