Cottage Pie with Cauliflower Mash

A warming winter dish. Perfect comfort food to fill you up. The mince and mash can be combined and baked as a low carb med-style shepherd’s pie or simply serve the mince with steamed greens. And the mash can go with any variety of meals as a side dish.

Ingredients

• 450-500G Minced beef
• 1 small onion diced
• 1 tin chopped tomatoes
• 2 carrots diced
• 1 tbsp olive oil
• 2 garlic cloves sliced
• 1-2 tsp thyme
• 2 tsp of Worcester Sauce or 1 beef or veg stock cube
• 1 medium cauliflower
• 2 spring onions finely chopped
• 1 tbsp full fat fromage frais
• 50g grated cheddar
• 2 tsp olive oil
• 1 dsp grated parmesan cheese

Method

Sweat the diced onions in the olive oil till golden, then add the beef, garlic and thyme. When cooked through add the tin of tomatoes, 1 beef stock cube (or Worcester sauce), the carrots and enough water to cover.

Cover with a lid and boil gently for an hour if you have time, stirring and topping up fluid as needed.

To make the mash chop the cauliflower into small pieces of about 1 cm diameter or smaller if you can, then steam or boil for 8-10 minutes until soft.

Mash vigorously (it won’t form the creamy solid texture of mashed potatoes). Add the grated cheese, 2 tsp of olive oil and the tablespoonful of fromage frais, finely chopped spring onions and mix together.

Put the mince in an oven proof dish. Dollop the cauli mash on top, scatter the parmesan on top and put in middle of a hot oven (about 200 degree C) for 20-30 minutes until crispy on top. Yum!

    This was very, very enjoyable. I didn’t have any thyme or spring onions so I left those out.

    One member of the family had a jacket potato with it and the other two had a serving of pasta. I of course had it as it stood. All enjoyed it very much.

    I would however say that for those not on a diet it only serves four adults especially if one or more are men and not six.

    This is well worth cooking and dishing up to the whole family.

    I made this yesterday and divided it into 6 dishes to make it easier for me to know the portion size.
    It’s very easy to make and tastes delicious.
    My husband had it as well and considering he doesn’t like cauliflower he really liked it.

    Easy for someone like me..not that good at cooking try it with mixing 1 tin of chick peas to the cauliflower mash..loveley

    Much, much tastier than I was expecting! I couldn’t imagine cauliflower mash being up to much but it was divine. Had friends round so I had just the one sixth so there was plenty for my two guests and there was still some left for me to freeze for another day. I’m going to make a batch of the cauliflower mash to have with other things. One guest followed the cottage pie with the no carb waffles and blueberries. He said he was ‘stuffed’.

    I added a bay leaf for extra flavour and served with some white cabbage. Delicious and very filling!

    This is seriously yummy- my major complaint was the will power necessary to resist going back for seconds! The portions are rather small if serving 6. Next time I’ll try bulking out a bit with more tomatoes, and the ideas above about chickpeas and a bay leaf. And more veg. Superb!
