Delicious and easy
Ingredients
• 2 cups grated cauliflower
• 2 chopped spring onions
• 1 egg beaten
• 1 tbsp soy sauce (or less depending on taste)
• 50g finely chopped bacon or ham
• 1 cup chopped broccolini
• 3 spears chopped asparagus
• 1/2 cup edamame
• Coriander for garnish
• Fresh chilli for some kick
Method
1. Cook bacon/ham in fry pan until soft over med heat
2. Add grated cauli and stir
3. Crack egg over bacon cauli mix and stir well over heat (alternatively make separate omelette and cut finely to add to mixture)
4. Add spring onions, broccolini, asparagus, edamame (or any other vegetable). Stir well. Allow to warm through not too long as they are best crunchy.
5. Add soy sauce
6. Garnish with coriander and optional fresh chilli's
7. Enjoy
