Roasted cauliflower soup

Creamy, slightly spicy soup for people who hate cauliflower!

Ingredients

• Half a cauliflower broken into florets
• 1 onion chopped
• 40g unsalted butter
• Greek yogurt
• 2 teaspoons Curry powder
• Half teaspoon powdered garlic
• Fry light
• Chicken stock cube

Method

I'm no cook but here's what I did..
Put the cauliflower on a roasting tray and spray with fry light. Sprinkle curry powder and garlic powder on top. Roast for 30 minutes at 180 degrees.
Fry the onion in the butter.
Put the roasted cauliflower into the fried onions and add chicken stock cube and 400ml water. Simmer for 30 minutes.
When done blitz with a blender till smooth, add the yogurt and enjoy. Keep refrigerated.

    I hate cauliflower and most vegetables. Started 2 days ago and needed something warm and filling. I found this recipe on the Internet and altered it a bit. On my fitness pal it comes out as 15 g carbs and 237 calories and even though I hate cauliflower I love this soup..

    I made this today, again as with most recipes I make a few personal changes. These were.

    Salted Butter
    No Yogurt
    Fresh garlic, I piece.

    A sprinkle of fresh coriander on top at the end.

    The whole batch comes in at under 200 calories, however I could easily make this last 3-4 meals.

    I found I had to add 800ml of water and 2 chicken stock cubes, as mine was far too thick. Once blitzed I tasted and felt that it needed just a touch more Salt.

    Very tasty soup, this is a keeper.

    Cauliflower soup….great recipe to add to the group…previously used Martha Stewart’s recipe …but she adds potato too…which I suppose we should undo …boo hoo!!!

    This is an easy delicious recipe!

    I like to cook so I made some modifications and used real chicken stock rather than stock cubes and fresh garlic rather than garlic salt. I also added bacon and some of the onion after I had blitzed it for taste and texture. My whole family liked it. (Mind you, they ate theirs with hot buttered toast).

    I’m not much of a cook and follow recipe’s the the “T”, this was absolutely delicious, easy to make, I’ve made it twice now for packed lunch for myself and my husband.
