Quick Bacon & Broccoli Fry Up

Here’s a delicious quick and easy lunch sent in by Dr David Unwin, GP

Ingredients

• 3 rashers of bacon
• Tablespoon olive oil
• 200 gms broccoli
• 20 gms of grated cheese

Method

Just fry bacon in olive oil, add mushrooms then broccoli or leeks.

Serve as it is or add a little grated cheese or mayo.
Simple !!

    Love this but can be bit dry and broccoli can be a tad under cooked so have added a splash of water to the broccoli mix and steamed it to soften the broccoli. Have also added some soy sauce just to add more flavour. This is one that my husband and I enjoy, this is a keeper!!

    Amazingly simple , tasty and filling and my teenage daughter has finally started to love broccoli again! I think this has to be my favourite 😊

    Favourite of mine and versatile .. I’ve added passata, which ups the Cals a bit (<100 for 250g), and varied with and without cheese. Also with garlic and chilli (add to onions after a couple of mins dry fry) and found that slicing the bacon and keeping the broccoli pieces small allows even cooking… Ooo, and a splash of Worcester sauce 🙂
