Quick Bacon & Broccoli Fry Up

Here’s a delicious quick and easy lunch sent in by Dr David Unwin, GP

Ingredients

• 3 rashers of bacon
• Tablespoon olive oil
• 200 gms broccoli
• 20 gms of grated cheese

Method

Just fry bacon in olive oil, add mushrooms then broccoli or leeks.

Serve as it is or add a little grated cheese or mayo.
Simple !!

    This looks excellent but you mention adding mushrooms – how many grams? 100?

    Delicious we had this with Quorn “fake” bacon 120g (150cals) and stir fried it with the leeks and mushrooms in 50ml of of soya sauce (50 cals) It was lovely, thank you David

    This is excellent and simple.
    I added a tsp of crushed garlic, a tsp of crushed ginqer and half a deseeded chili (optional)
    Today I substituted half the broccoli for chinese cabbage and used a 1tsp of Ras-El-Hanout
    I suspect there are many variations on this as a base

    Liking bacon, broccoli & mushrooms, this has to be my favourite recipe tried so far! I had some home-made chicken stock so I added a “slosh” just to give some moisture.

    this looks really nice and I will definatly try this. the only thing is I will be doing it on my own so only really needing recipes with 1 serving . I have worked it out as 2 slices of bacon 90 cals. 100g broccoli 34 cals. tablespoon olive oil 120 cals. I wont use the cheese so this works out as 244 cals for 1 serving? does that sound about right? I will also add some garlic and chilli as someone stated above . thanks
