Peanut Butter Pancakes

High flluffy pancakes, yet really filling and keep you full for hours. High fiber high protein.

Ingredients

• 2 TBS heavy cream
• 1 1/2 TBS sugar free peanut butter (or almond butter)
• 1 large egg
• ½ tsp bourbon or vanilla
• 1 1/2 TBS whole golden flax, ground (or 2 TBS if pre ground)
• 1 1/2 TBS peanut flour (or almond or hazelnut flour)
• 1/4 tsp. baking powder
• pinch saltbutter (to grease the optional silicone rings, and pan)

Method

Highly recommend the silicone cooking rings (Amazon carries them) as that is the only way to get a tall fluffy pancake. They are fine without...just will be flatter.

Warm the peanut butter and the heavy cream in the mixing bowl in the microwave for 20 seconds. Stir well to mix. Add the remaining wet ingredients to the bowl and mix together until smooth.
Add dry ingredients (flax, peanut flour, baking powder, salt) and wisk together well.

Preheat the pan to medium heat.

Use silicone pancake rings to get really tall fluffy pancakes. This recipe makes 3 tallpancakes, or 5 flatter ones.

Once the pan is warm, grease the inside of the rings with some butter, and place the rings in the pan. Add a bit of butter inside each ring then add pancake batter.

Cook the pancakes about 5 minutes on the first side until the sides are starting to firm up and the top is bubbling. Remove ring molds from the pancakes (they should stand by themselves).

Flip and cook for additional 1minute on the second side.

Serve with warmed apple sauce, sauteed dieced apple, or sugar free maple syrup
