Delicious prawn dish, with shallot, garlic, cherry tomatoes and hot paprika, perfect to spice up a lunch or dinner.

Ingredients

• 100g King Prawn (Peeled & Raw)
• 40g Sliced Shallot
• 22g Butter
• 82g canned Cherry Tomatoes
• chopped/crushed Garlic
• Hot Paprika

Method

Gently fry the shallots in the butter until they begin to soften, then add the chopped/crushed garlic and a generous sprinkle of hot paprika to taste. After a couple of minutes add the prawns and when cooked on one side, turn them and then add the tomatoes. Allow the tomatoes to warm through and serve.

If calorie allowance allows, you can add a dash of wine, or cream/crème fraiche. Or may be even some crumbled cheese.

Really tasty, added sliced mushrooms at the shallot frying stage to make it a more substantial meal. It made a very satisfying lunch, will try it with mussels next time!

I really enjoyed this recipe, used just smoked paprika because I can’t eat hot spices. Although I did add half a pouch of gourmet mixed grains as it wasn’t enough to use as one meal.
