Mexican Burger Platter

A taste of Mexico – a juicy chipotle turkey burger, zingy salsa, and creamy homemade guacamole with a kick.

Ingredients

• For the burgers:
• 500g 2% fat turkey breast mince
• 1 tsp chipotle chilli flakes, or 1 whole chipotle chilli, chopped finely
• 1 large egg, yolk only
• 2 cloves garlic
• Salt & freshly ground black pepper
• 1 tbsp oil for frying
• For the salsa:
• 3 medium sized tomatoes
• 1 small red onion
• 1-2 red birds eye chillies, finely chopped
• 1 tsp lime juice, or to taste
• For the guacamole:
• 1 medium avocado
• 1 small red onion, finely chopped
• 1-2 red birds eye chillies, finely chopped
• 60g cherry tomatoes, quartered
• 1 tsp lime juice

Method

Burgers:
1. Preheat oven to 180C or equivalent.
2. Place all the ingredients for the burgers in a large bowl - except the oil - and mix well, until it comes together in a large ball. If it doesn't come together, use your hands. Split into 3 even sized balls.
3. Press each ball into a patty, and refrigerate for 15 mins.
4. Heat the oil in a heavy bottomed pan. Remove the patties from the fridge, and fry on each side for 4-5 mins, until well browned.
5. Place on a baking tray in the middle of the oven for 15-20 mins, until cooked through, but still juicy.

While the burgers are cooking, make up the salsa and guacamole.

Salsa:
1. Finely chop the onion, and mix with the chillies.
2. Roughly chop the tomatoes, stir into the onion and chillies, then add the lime juice, bit by bit, to taste.
3. Season with a little salt and pepper to taste. Cover and chill until ready to serve.

Guacamole:
1. Mash the avocado, then stir in the chopped red onion, chillies, cherry tomatoes and lime juice.
2. Season to taste with salt and pepper.
3. Cover and chill until ready to serve.

To serve: plate the burger, top with a dollop of salsa and guacamole, and serve with a mixed salad of your choice and jalapenos (calories for salad and jalapenos not counted).
