Tasty, easy, quick, makes 4 large servings; great with cauliflower mash
• 1 can lentils- drained
• 1 tbsp olive oil
• 1 small onion
• 1 carrot
• 1 grated zucchini
• 1 tsp crushed garlic
• 1 tsp pesto
• 1 can crushed tomatoes; Italian flavoured is good
• 1/2 tomato can of water
Heat olive oil and soften finely chopped onion, garlic, diced or grated carrot and grated zucchini.
When soft, add pesto and drained lentils.
Cook 5 minutes stirring often.
Add tomatoes and 1/2 tomato can of water.
Simmer slowly around 15 minutes.
Great over cauliflower mash but flavours develop if it is left overnight and reheated.
