Lemony Garlicky Chicken and Courgetti with green beans

A delicious dinner that makes you forget you are on a diet – all the family can enjoy !

Ingredients

• 1 Breast of Chicken
• 1 Courgette - or 2 if you a hungry
• half a packet of green beans
• Garlic and herbs
• 1 Tbl Spoon of Coconut flour (or other nut flour)
• 2 Tbl Spoons of Olive oil
• Juice from half a lemon
• Salt and pepper

Method

I must note my inspiration came from the lovely recipe for chicken by blackspot.

Finely chop your garlic and put into a small jug with some mixed herbs and add the olive oil Leave to infuse for as long as possible (I always have one on the go - it adds flavour to most things)
Smash the chicken breast so it is flat like an escalope (use cling film to keep tidy)
Pour about a teaspoon of your infused oil on the chicken and massage your breast (-:
Sprinkle over the coconut flour, and heat a frying pan using your oil.. while the oil is heating...

Spiralize your courgette, If you don't have a spiralizer use your peeler and make long strips.
Quickly cook your green beans by throwing them into a pan of boiling water after they come to the back to the boil they are done . they need to have bite.

Put the chicken in the frying pan pan and cook for approx 2 min each side, when almost cooked squeeze in your lemon and leave to sizzle away .. cut in half to ensure it is cooked through

Quickly cook the courgetti in a cm of water, (just until it is warmed through really)

In a bowl put in the cooked green beans, and courgetti and add a tablespoon of your favourite pesto.. mix up and then add the cooked lemony garlicky chicken to the bowl - either in strips or whole - I prefer whole.
Pour yourself a big glass of water with ice and a slice and enjoy

    Tried this last night with turkey instead of chicken. It was lovely although I didn’t use the nut flour as I didn’t have any. Very tasty, thank you

    Made this last night, delicious. 2 amendments, didn’t have any courgettes in shop (I know couldn’t believe this!) so served with green beans as per recipe) and brocolli (steamed). Also didn’t have any nut flour so used a very light coating of fine oatmeal.

    Made a version of this the other night. Used a light dusting of coconut flour on the chicken (after massaging my olive oil/garlic/herb mix into it). Cooked it in a little coconut oil and squeezed some lemon juice over towards the end of cooking. So tasty and so satisfying. Thanks!
