Eggy stir fry veges with bacon

Delicious, satisfying quick lunch or dinner


• Serves one
• Ingredients
• 1 tbs olive oil
• 2 large eggs
• 2 tbs light soy sauce
• ! medium mushrooms, sliced
• I bunch Chinese greens
• 1 clove garlic, chopped
• Chilli flakes
• I slice bacon
• Salt and pepper


Fry chopped bacon in pan until done to your liking. Chop Chinese greens and garlic, stir fry in olive oil for 30 seconds in fry pan. Add soy sauce and sliced mushrooms and cook for 3 minutes or until greens have wilted and mushrooms are cooked. Add chopped bacon and chilli flakes to taste.
Whisk eggs in bowl, add salt and pepper, and pour over vegetables and bacon, leave for 1 minute and then fold egg mixture into veges until cooked to your liking. Enjoy!
