Easy Key Lime Pie

An easy low cal version of the real thing.

Ingredients

• 250g fromage frais
• 1 stem ginger cookie (from M&S)
• 180g fresh raspberries
• 0.5 -1 tsp (according to taste) lime flavouring essence (from Lakeland)
• 1 tsp (according to taste) Truvia.

Method

Make the cookie into crumbs (either by putting into a plastic bag and rolling a rolling pin over it, or crumbling by hand). Put in half to each small serving dish.

Give the raspberries a quick wash then mix with the fromage frais, the lime essence and the Truvia. Divide between the two serving dishes on top of the crumbled cookies.

Store in fridge until ready to serve for around 15- 30 mins.

    My husband didn’t believe he could eat this ! But we both found it absolutely scrumious

    Delicious. Had to use lemon essence as I couldn’t get lime, but worked well nonetheless. Only used about 5 raspberries in each dish as the quantity given in the recipe meant I wouldn’t have any raspberries left for my breakfast with Greek Yoghurt!
