Chickpea pancakes with warmed berries

Delicious low calorie recipe. Great for weekend breakfast or dessert treat.

Ingredients

• 2 tablespoons of chickpea flour
• 1 egg, beaten
• Little water
• . 25 tablespoon of coconut oil to fry (you will need more if you haven't got a super-non-stick pan
• Berries( image shows 75grams in total)

Method

Beat egg
Whisk in flour
Add water to make a thin batter
Melt coconut oil and make 3 thin pancakes.
Warm berries
Serve

*1 tablespoon of cream adds 68 calories and 0.6 carbs. You could use Greek yoghurt or for special occasions add a favourite liqueur to the pan and pour over.... Or a tiny amount of grated dark chocolate... Or go savoury and add cheese before rolling.. Very versatile.

    Really enjoyed these chickpea pancakes and very easy to make with few ingredients. I had mine with warmed berries as suggested and added a spoon of Greek yogurt, delicious!

    Really good recipe and very versatile for sweet or savoury, I have made it twice and prefer it to a traditional pancake and I have found it very filling.
    It would be great for fajitas.

    An excellent recipe. I use chia ‘jam’ made from fresh/ frozen berries with these. Top with lovely thick Greek yoghurt.
    Chia jam is easy to make. Just fruit in a saucepan-add a small amount of water-add a couple of teaspoons of chia seeds. Let the natural fruit juices run out. Develop a consistency you like while cooking over a LOW HEAT. Taste. If not quite sweet enough add some vanilla paste/extract or a tiny amount of your favourite sweetener-as little as possible to preserve the fruit flavour. Berries are especially good but I have made apricot and cherry as well very successfully with no added sweetener. Can be thick or thin depending on the consistency you choose. Leave to cool and the chia seeds are hardly to be seen. Delicious.

    a wonderful 5 minute breakfast to make a change from eggs or smoothies. I just thaw some frozen berries (if fresh are out of season) in the fridge overnight, and in the morning make and cook the pancakes which takes about 5 minutes max, nuke the berries for 30 seconds, scoop some yoghurt. Breakfast. Done. Yum. Filling. Brilliant.
