Brunch Peppers

Yummy baked peppers with egg and bacon. I ate it and it was gone before I remembered to take a picture!

Ingredients

• I Pepper (halved and deseeded)
• 2 slices of bacon
• 1 cherry tomato
• 1/2 spring onion
• 15g cheese

Method

I precook my bacon as I like it crispy but it probably isn't necessary.

Arrange your peppers in an oven dish, I used a loaf tin as it helped to stop them tipping over. If you are doing more to feed others then try to arrange them so they won't tip.

Add a slice of bacon to each pepper half, then a few bits of chopped spring onion to each. Then crack an egg into each topping with sliced tomato and cheese.

Bake in the oven at 200, for 20 mins. Less if you like the yolks runny.

390 calories, 11.9g carbs.

    I made a bit of a mess of this. I think my pepper was a bit small so there wasn’t really space for the egg once the bacon and tomato was inside and I also really overcooked the egg to make sure the pepper and contents were done properly. Next time I’ll have a bigger pepper (or maybe the same size but just take the top off rather than halving it?) and put the pepper and it’s contents in the oven for 10 minutes or so before adding the egg.
    Loved the idea though and it was really tasty and adaptable and I’m sure I will use some variation of this idea on a regular basis so thank you Izzy.

    Thanks for tip AndreaE. Added egg a bit later on too. Here’s a pic of mine as I waited for it to cool a bit.
