Basic recipe to make 4 wee griddle scones, farls or a small soda bread loaf
• 125g wholemeal flour
• 25g butter
• ½ tsp baking powder
• 75mls buttermilk
Rub the fat into the flour; make a soft dough with the buttermilk. Handle very lightly, shape onto a round and cut into scones or a round (loaf) cut into farls (quarters or wedges) . Lightly oil a small pan, arrange the scones, farls or round in to the pan and put the lid on - this helps the rise. Check after a couple of minutes and turn if browning, ready when well risen and golden. These freeze well and defrost quickly in the microwave in a covered dish.
