Yellow Curry and quinoa fish cakes

so easy and yummy.. even the 14 year old kid said he was full… he had 2 patties though

Ingredients

• 260gm white fish (I used basa fillets)
• 1 egg
• 1 spring onion
• zest of 1 lemon
• 1 cup cooked quinoa
• 2 tsps yellow curry paste

Method

blitz fish in a blender
add rest of ingredients and divide into 4 patties.

grill on the stove top lightly with coconut oil spray.

serve with a rainbow salad and curried mayo and fresh lemon

    I used the quinoa to help bind instead of using any flour… we really enjoyed it and it’s been requested as a staple in our house.. I hope you all enjoy. you could use chicken if you don’t like fish.
