Hello this may well be delicious but is not vegan!
Healthy Eating Anytime of the Day!
• 1 egg
• 1/2 cup egg white
• 6 cherry tomatoes (halved)
• 6 asparagus spears
• 1 portobello mushroom (sliced)
• 1 handful baby spinach
• 1 tablespoon olive oil
• Salt & cracked pepper
• Garnish with fresh coriander
Place oil in frypan. Add tomatoes, asparagus, mushroom and sauté until al dente. Set vegetables aside.
Beat egg and egg white together with salt and pepper.
Pour egg mixture into frypan. Add spinach when egg mixture is cooked on bottom then arranged cooked vegetables on top.
Fold omelette in half. Cook for 2 minutes.
Cut omelette in half while in frypan. Plate up and garnish with fresh coriander and more cracked pepper.
