Tuna and butterbean hash

A great veggie recipe for when you miss mashed potato! Very quick and easy!

Ingredients

• 1 tsp od olive oil (unless you have a good non-stick frying pan)
• 1tsp finely chopped garlic
• Half a tin of butterbeans
• Half a tin of tuna in brine not oil
• Finely chopped parsley
• Salt and pepper to taste

Method

Heat frying pan
Add garlic and cook through on a low heat
Add butterbeans and 'mash' them with the back of a wooden spoon
Stir in tuna
Add herbs, salt and pepper

Serve with a green salad or some steamed green veg

Tuck in!

    I haven’t tried the whole recipe but it did inspire me to try butterbean mash and it was lovely, thanks for the idea 🙂

    Did this slightly differently – fried garlic – mashed beans and tuna in basin added garlic and parsley, mixed well – shaped into ‘fishcakes’ and fried with low fat spray. Delicious with watercress.

    Love this quick and easy single serve meal. Just like a fish cake made with potato but uses beans instead. Good with cannellini beans or a small tin of salmon in springwater too. Great for breakfast, lunch or dinner. Add salad if wanted. Yummy!

    Made double with salmon and partner really enjoyed it as well. Had for my main meal with salad, surprisingly filling and tasty. I made the calories 270 plus 20 cals for 1 teaspoon of oil (shared between 2). Lovely thank you.

    Super simple and quick to make, ideal for a midweek supper. I served it with thickly sliced courgette and spinach, fried in a little olive oil with garlic and lemon zest. Very tasty, thank you.

    Made this for dinner my husband and daughter also had some, we had it with a vegetable stir fry. I also made the mix into mini fishcakes we all found them really tasty.

    REALLY enjoyed this . Made it as per recipe – super-easy and delicious. Had it with wilted spinach. May add sumac for its lemony/spicy flavour and possibly stir the spinach into the mixture. I foresee a lot of variations to come on a great recipe for any meal of the day.
