Thai Spicy Pork and Egg Brunch

Adapted from Marion Grasby’s recipe, quick and easy to prepare, yet packed full of the flavours of the Far East.

Ingredients

• INGREDIENTS
• 3 garlic cloves
• 3 birds eye chillies
• 1 tbsp Olive oil
• 200g pork mince
• 1 tbsp oyster sauce
• 1 tbsp fish sauce
• Handful of basil leaves
• 2 eggs

Method

INSTRUCTIONS
Using a pestle and mortar, pound the garlic and chillies to a very rough paste.

Heat half of the oil in a pan on a high heat adding the garlic chilli paste and stir-fry for half a minute. Next add the pork and stir-fry for a minute. Add the oyster sauce and fish sauce and stir-fry until the pork is cooked. Toss through the basil leaves, then remove from heat and set aside.

Heat the remaining oil in a small frying pan on a high heat. Crack the eggs in and cook for 2-3 minutes or until the edges are crispy and the yolk is cooked to your liking.

Divide the spicy pork mixture between 2 plates and top each with a fried egg.
