Ingredients
• Thai tea leaves – 2 tablespoons
• Water – 1 cup
• Low fat milk or unsweetened almond milk – ½ cup
• Condensed milk – 1 teaspoon
• Optional natural sweetener such as stevia – to taste
• Tapioca pearls – ¼ cup cooked
• Ice cubes – as required
Method
Boil water and add Thai tea leaves. Steep for 5 to 7 minutes, then strain and allow to cool slightly.
Stir in low fat milk or almond milk while the tea is warm.
Add one teaspoon condensed milk for flavour. Adjust sweetness with stevia if required.
Cook tapioca pearls according to package instructions and rinse in cold water.
Add tapioca pearls to a glass, followed by ice cubes.
Pour the prepared Thai tea over the ice and stir gently before serving.
