Extremely simple but deliciously spiced and marinated lamb chops served with a fresh salad of red onions, carrot, apple and leaves.
• 4 lamb chops
• 2 tbsp greek yoghurt/natural yoghurt
• 1 or 2 tbsp tandoori masala powder (to taste)
• inch cube of ginger, grated.
• half a red onion, thinly sliced
• small apple, thinly sliced
• rocket leaves
• spinach leaves
• 2 tsp olive oil
Chops: 319 calories per chop
I like my chops spicy, so I use 2 tbsp of the tandoori powder, mix it in with 2 tbsp yoghurt, squeeze the juice of half a lemon and the grated ginger. Mix together then pour over the lamb and coat both sides thoroughly . Cover and put in the fridge for at least 2 hours. I usually make it up the day before. Then grill or bake and serve with a salad.
Salad: 42.5 calories
Mix the thinly sliced carrots, apples and red onion with the leaves.
Dressing: 44.5 calories
Mix the lemon juice with the olive oil, add salt and pepper and garlic powder to taste.
