Tastes healthy green side to make the best of the “quick way with salmon” from the recipe book

Ingredients

• For 1:
• 1 leek sliced thinly
• 1 courgette sliced thinly or into ribbons
• Big Handful of kale
• Garlic chopped (1-2 cloves)
• Chilli flakes or fresh chilli (optional)
• Tbsp oilThese ingredients are tasty enough, but to make it extra special add Marinade from the Spring onion and soya sauce salmon in the book

Method

As you start, remove the salmon from the marinade and pan fry it.

To do the greens:
Heat a tbsp oil in a wok or frying pan. Add leek and courgette and soften for a couple of minutes. Add the kale and garlic with couple of tablespoons of water. Cover and steam for a few mins, then uncover add the marinade from the salmon and continue to stir fry until cooked to your taste.

NB: the salmon marinade is 1 tbsp oyster sauce, 1 tbsp soya sauce, 1 Spring onion chopped, some fresh ginger and juice of a lemon. You can just mix those together and add to the veggies if you're not into salmon. Bet that marinade is nice with chicken or prawns too. Or aubergine.

    Thanks for this recipe it was delicious. I combined it with the Salmon recipe. I put the marinated salmon , with all the marinade on top of the Vegetables before putting the lid on and steamed it until the salmon was cooked. Was moist and full of flavour .
