Spicy turkey and Cannellini bean casserole

A recipe to suit the whole family using turkey, a great alternative to chicken!

Ingredients

• 100g diced turkey breast
• 50g Cannellini beans
• 1 carrot
• Half a red onion
• 1 celery stalk
• Half a tin of chopped tomatoes
• Pinch of chilli flakes
• 100g broccoli or green beans
• Coconut oil cooking spray

Method

Finely chop the onion, carrot and celery before frying in the cooking spray with the pinch of chilli flakes until soft.
Add the diced turkey and cook through until slightly coloured.
Add tomatoes, Cannellini beans and a splash of water if required.
Season with a good pinch of black pepper, salt and any other herbs or spices to taste.
Simmer for 10 to 15 minutes.
Serve with the green beans or broccoli.

    This is fabulous, thank you! It’s also really good if you use mushrooms instead of carrots, just add them in towards the end instead of at the beginning.
