Spiced oats & onions mainly

Ingredients

• 100g fried onions
• 50g toasted (or dry fried) whole oats
• 1/4 tsp salt
• 1/4 tsp pepper
• 1/4 tsp ground pimento berries
• water
• Please note that the spice mix is to my taste so taste as you add them to the mixture & adjust to your taste before steaming.

Method

Mix the onions, oats & spices together then add enough hot water to make a loose mass.

Steam using the"bain marie" method.

Serve as a side dish, stuffing, a filling for filo parcels or use to spread on flat bread. Nice rolled into balls & either oven baked or fried as stuffing balls. Spread on fish & bake in a parcel.
Please experiment, it's up to you to find your balance, I have also substituted barley for oats & it's lovely.
