Tasty recipe. Much less bland than I thought it would be. I would have like to know how many calories, carbs etc as I’m new to this diet and no idea of calorific value etc.
A comforting and economical dish which can be served with quinoa or cauliflower rice.
Ingredients
• 8 good quality sausages
• 1 red pepper
• 1orange pepper
• 1green pepper
• 4 large mushrooms
• 1 tin chopped tomato
• 1 red onion
• 1 clove garlic crushed
• Dried oregano
• Fresh green or red chillies (optional)
• half a chicken stock cube
• Olive oil
Method
Brown the sausages in a small amount of olive oil in a pan whilst chopping peppers, onions and mushrooms. Combine all ingredients in a casserole dish and cook for approx 45 minutes.
