Pork Meatballs and Swiss Chard

lovely and flavourful one pot meal! serves 4
each potion is only 320 calories.

Ingredients

• FOR THE MEATBALLS
• Pork Mince (10%fat) 500g
• grated protein cheese 40g (or small amount of Parmesan)
• anchovies 4-8 (depending of flavour)
• 1 lemon (zest only)
• 1/2tbsp Rapeseed oil.
• 1tsp dired oregano
• 1tsp tried time
• salt
• and generous black pepper.
• ---------------------------------------------------
• 250ml good quality vegetable stock.
• ---------------------------------------------------
• Serve with Swiss Chard or Spinach.

Method

Preheat over to 200c.

Comibe all the ingrediants for the meatballs into a bowl. (excluding vegetable stock and chard)
give them a good mix with your hands until completely mixed.

now using your hands, divide the meat mixture into 8 meatballs.

next in a oven proof caserole dish brown the meatballs slightly over the Hob. Once browned, add the vegetable stock to the pan making sure that the meatballs are submerged half way. transfer to a preheated oven and cook without a lid for 20 minutes. (the tops should be slightly crispy)

Transfer the meatballs onto a warm plate. leaving the stock in the pot. bring the stock to a boil on the hob, add the chard and cook for 3-6 minutes.

divide the meatballs between 4 bowls, serve up the chard besdie. then spoon over the lovely stock liquid.

this make a quick and heatlhy mid week supper.

    I’m going to try this – sounds good. Just make a small correction in the recipe ingredients, not ‘tried time’ but perhaps ‘dried thyme’?
