Poached eggs on smoked salmon

Welllll, it’s poached eggs on smoked salmon.

Ingredients

• 50g smoked salmon
• 2 speckly brown eggs
• 5g butter
• black pepper

Method

1. Poach 2 eggs. (I use an egg poacher with the little plastic cup thingies which need buttering. If you can do them properly just in water you'll earn my admiration and save 35 calories.)

2. Put smoked salmon on plate.

3. Put eggs on smoked salmon.

4. Grind on some black pepper.

5. Scoff.

If you're cooking for people not on the diet, they could have buttered, toasted muffins under the salmon to make a more substatial meal.

    I have been doing this with just the one egg but a bit more salmon. I don’t count the butter as very little of it seems to stick to the egg (probably just wishful thinking)

    This a quick and easy tasty breaky or brunch.
    Easy variation is to scamble the eggs then add the salmon in smaller pieces with some chives.

    I love this for lunch too but I add a cup or 2 of spinach which I wilt with garlic and a splash of hot water. Makes it really filling and you forget the need for toast 🙂

    1 tbsp. of olive oil in the frying pan, together with chopped spring onion and very small clove of garlic, threw in some spinach and 5 florets of broccoli. Fried for just a few minutes only. Poached one egg (in one of those plastic cups… sorry!). Placed the smoked salmon onto the spinach, egg on the top, surrounded by broccoli, touch of ground black pepper and Himalayan salt and a tspn of French mustard. Absolutely gorgeous.

    Just a little tip for all you egg poachers out there: Line a small cup with cling wrap (you don’t have to be too precious about this) and crack the egg into the cling wrap. Twist the end, knot it and drop into simmering water. Voila! Perfect poached egg! You could also add whatever herb / spice to the add before sealing. Cheers.
