poached egg tofu breakfast stack

Yummy breakfast stack of layered tofu, avocado, spinach and egg

Ingredients

• slices of tofu
• sliced avocado
• poached egg (or any method you like)
• Willted spinach
• cherry tomatoes (optional)

Method

Dry fry (or very little oil) some sliced of Tofu - get it with nicely browned on either side. Layer some sliced avocado on top (approx 1/4 to 1/3 of an avo, season with salt and pepper and a squeeze of lemon, add some wilted or fresh spinach leaves and top with a poached egg. (note, I just wilted the spinach leaves in the pot of water I was using for the poached egg). The Tofu does take a little time to fry off so allow for that - basically have it finished when you poach the egg. I'm thinking of frying off enough slices for a couple of breakfasts and keeping it in the fridge. Tofu is a good protein source but pretty low in calories which helps balance out the higher calorie count of the avocado. Garnish with some halved cherry tomatoes if desired. the fried tofu resembles fried haloumi in appearance and texture but a fraction of the calories. Note, tofu doesn't taste of much so the flavour comes from the seasoning and other ingredients.
