Parcel Pork

This is delicious I found this going through my old scrapbook of recipes. It cooks by steaming in its own juices and those of the other ingredients.

Ingredients

• 500 grams Pork Fillet (tenderloin)
• 1 Medium Gala Apple
• I medium onion
• 24 closed cup mushrooms
• 125ml Chicken Stock
• Garlic
• Salt & Pepper
• Tablespoon of olive oil
• 100 ml Double cream

Method

Slice the pork into 125 gram slices. Cut and core the apple and quarter then slice each quarter. Dice the onion and mushrooms and saute in a frying pan with the oil and garlic until soft. Get 4 medium sheets of foil (big enough to make a parcel leaving room for the steam)
Place a slice of pork on the foil sheet and spoon the other ingredients equally divided on top. Pour over the stock in equal amounts Sprinkle with salt and pepper and drizzle over the cream. Wrap up into a parcel leaving room for the steam to cook the meat. Roast for 15 to 20 minutes at 170 degrees. Serve with veg or salad or both!
