Mocha Blueberry Chia Pudding

Great for a coffee / chocolate high protein and hi-fibre hit without the calories. The blueberries sweeten the deal. Great for breakfast too.

Ingredients

• 15g Chia seeds
• 75ml full fat milk
• 1/2 tspn unsweetened cocoa powder
• 1/2 tspn instant coffee
• 40g blueberries

Method

Heat the milk in the microwave for about 1 minute.
Add the coffee and cocoa and stir with a spoon to dissolve any lumps.
While still warm add chia seeds and stir.
Leave for at least half an hour (great chilled in the fridge overnight). The chia seeds will form a gel like coating and thicken in the milk mix.
Stir fresh blueberries in just before serving.

    Tried this out today – I didn’t know if I would like the texture of the chia seeds but I was pleasantly surprised. Nice mocha flavour contrasting with the sweetness of the blueberries. Very easy recipe. Makes for a good dessert.

    I make this with unsweetened vanilla almond milk the night before – love it for a quick breakfast!

    Loved this idea. Used unsweetened almond milk, cinnamon and vanilla essence and left in fridge overnight adding blueberries and raspberries in the morning for really tasty breakfast. Kept me going from 8am until late lunch at 3.00pm!
