Veg filled tasty soup with beans

Ingredients

• 1 tbsp olive oil
• 1 500g/ml carton passata
• 1 courgette finely diced
• 1 carrot finely diced
• 1 onion finely diced
• 2 garlic cloves chopped/crushed
• 2 celery sticks finely diced
• 1 chicken stock cube
• 200g fine green beans chopped in half
• 1 400g tin cannellini beans
• 500ml hot water
• Pinch of mixed herbs
• Seasoning

Method

Cook onion, carrot, garlic and celery for 5 mins in olive oil until starting to soften.
Add passata and herbs and bring to a boil and simmer until carrots are nearly tender.
Add chicken stock cube and water to pot and add courgette and both types of beans.
Simmer until green beans are cooked.
Season with salt and pepper to taste.
Serve.

This freezes really well and fills you up.

    Tried this for the first time 2 weeks ago………………absolutely loved it! Had it again last week at my husband’s request and am doing it for Easter Saturday lunch for the whole family. It’s so tasty and, as you said, very filling and really easy to make – well done bernie fantastic recipe.
