Someone from the UK shared this on the Facebook page and I don’t know who to give the credit to but I love them. I had to convert metric to US and I share these at work with my co-workers. Always a hit. I’ll have to add a photo later – they all got eaten up today

Ingredients

• 2 eggs
• 1/4 c cheddar cheese
• 1/2 cup bacon pieces
• 1 green onion
• 1/4 length of average zucchini

Method

Mix together all ingredients in a bowl. I like to scramble the eggs up before the other ingredients are added. Scoop into 12 mini muffin tins, nearly full- they puff up - prepare first by spraying with cooking spray or greased with coconut oil, etc. Bake at 350F for 20 minutes.

3 quiche = 105 calories approx.

    We had these for Sunday breakfast with seitan instead of bacon and they were delicious. Super easy to make, too. Served with avocado, blueberries, walnuts and cottage cheese.

    Excellent! Only problem is my wife and daughter think so to. Not to worry I’ll just have to make more. The ultimate compliment.
