Lentil Soup

A yummy soup with a little kick

Ingredients

• 1 tbsp olive oil
• 350g red lentils
• 3 small onions
• 2 x beef stock cubes
• 1 litre water
• 1 tsp chilli powder (optional/to taste)
• 1 tsp garlic powder
• salt and pepper to taste

Method

In a big pan add the olive oil and onions and fry until soft. Meanwhile use the water and cubes to make 2litres of beef stock.

Once the onions are soft add the chilli powder and garlic and stir around for a minute, then add the lentils and the beef stock.

Bring to the boil, then simmer for 20 mins, blend with a hand blender (or not - your choice) add salt and pepper to taste, enjoy.

    I signed up to leave a review on this. It’s absolutely delicious and so simple to prepare. Absolutely what I was looking for. I used 1.5l stock and it was neither thick or runny.

    This is really tasty – I’ve made it a couple of times, and love it. BUT if you’re using dried split red lentils (which I presume you mean, cos otherwise you wouldn’t need to cook them, but just heat them up) they’re around 320 cals for 100 gms, so 1120 for 350 gms, making a portion (based on 6 servings) 186 cals before you add the oil, onion etc. It’s still ok, for a 200 cal lunch….but it’s NOT 100 cals a portion!
