Lentil Soup

A yummy soup with a little kick

Ingredients

• 1 tbsp olive oil
• 350g red lentils
• 3 small onions
• 2 x beef stock cubes
• 1 litre water
• 1 tsp chilli powder (optional/to taste)
• 1 tsp garlic powder
• salt and pepper to taste

Method

In a big pan add the olive oil and onions and fry until soft. Meanwhile use the water and cubes to make 2litres of beef stock.

Once the onions are soft add the chilli powder and garlic and stir around for a minute, then add the lentils and the beef stock.

Bring to the boil, then simmer for 20 mins, blend with a hand blender (or not - your choice) add salt and pepper to taste, enjoy.

    I make a similar soup but add celery and just 1 small parsnip which gives it some sweetness. I use vegetable cubes instead of beef stock so it’s also a good ‘veggie’ recipe.

    The ingredients say 1 ltr water, the method says make up to 2 litres of stock, is there a typo or am I missing something.

    Yes John I did add 2 litres, but you can add more or less depending on how thick you like your soup 🙂

    Made a batch of this today with some for the freezer on days when it’s harder to be organised.
    Tastes great and feels substantial.

    Just made this soup so I can take some to work every day. It was rather yummy. Thank you so much for this 😛. I did just add a little turmeric too but that’s because I use as much of that in my diet as possible.

    Had some of this for lunch and due to make another batch for the freezer. Tastes great and really filling.
