Delicious vegetable and lentil bake. Serves 4. 200-250cal per serving.
• 1 x Onion
• 2 x Peppers
• 1 x Courgette
• (any other veg you fancy!)
• 1 x Chicken breast (optional)
• Tin of tomatoes (chopped)
• Tin of green lentils
• 1 x ball of Mozzarella
• Olive oil
• 1 x Chilli, finely chopped
Roughly chop the vegetables and place in a roasting tin. Drizzle with olive oil.
Bake in the oven (at about 200C) for 20 minutes. If having chicken as well, bake this in foil at the same time. Once the chicken is cooked, chop into chunks and add to the vegetables.
Drain and rinse the lentils and add to the vegetables. Add the chopped tomatoes and chilli. Mix thoroughly and place back in the oven for a further 25 minutes.
Chop the mozzarella into 5mm circles and place on top of the bake. Bake for another 5 minutes or until the mozzarella has turned golden. Eat, and enjoy!
